Sage Flavoured Pork Chops Jamies Style

- Sage flavoured pork chops – Jamie’s style
1 kg potatoes, peeled, cut in small cubes
4 pork chops (I used chops with bones)
24 big sage leafs
one garlic head, unpeeled
4 slices of prosciutto, finely cut
50 g butter, cut in cubes
4 dried apricots, finely cut
6 slices of pancetta or smoked bacon, cut
extra virgin olive oil
Heat the oven to 220 degrees C.
Boil potatoes in hot water, aprox 5 minutes, then drain.
Cut the pork chops horizontally, in order to create an interior pocket. Don’t cut the edges.
In the blender mix 8 leafs of sage, one garlic clove (peeled and finely cut), prosciutto, butter, salt, pepper. Insert the cream in the pockets of the pork chops.
On a plate put the sage leafs, splash with olive oil and a bit of flour. Put one sage leaf, floured side down, then one pork chop, then another sage leaf; repeat with all pork chops. Cover with plastic foil and let stand for aprox 15 minutes).
In a tray mix potatoes, pancetta, garlic cloves, unpeeled, 8 sage leafs, splash some olive oil and bake in the oven.
After 10 minutes, heat a pan and fry the pork chops in a little oil until they are golden and crisp (aprox 10 minutes). Put the pork chops on top of the potatoes and bake for further 10 – 15 minutes.
