Whenever I feel I need chocolate (it happens quite often, actually…), the perfect taste to calm down the cravings is the brownies taste. Obsessed with brownies as I am, I can honestly say that mascarpone brownies are the best!!! Ever!!! Actually, after I finish writing this post, I’ll prepare some . I completely understand Nigella’s question in one of her books: this brownies are sooooo good, I wonder why people don’t prepare it all the time375 g unsalted butter, cut in small pieces
375 g dark chocolate, minim 75% cocoa (I used 85% cocoa – love dark chocolate…), broken into small pieces
6 eggs (at room temperature)
500 g sugar
225 g flour + 1 tsp salt
250 g Mascarpone Cream, very cold
rectangular baking tray 33×23x5 cm
Heat the oven at 180 degrees C. Prepare the backing tray with a little bit of butter and some flour. Melt the butter and the chocolate in the microwave oven or at very low heat. Let it cool for 15 minutes. Mix well the eggs and sugar, until you obtain a fluffy cream. Add the chocolate and mix well. Add the flour and mix well, scraping the sides and bottom of the bowl. Pour half of the chocolate cream in the prepared baking tray, then spread full teaspoons of cold Mascarpone cream, then pour the rest of the chocolate cream. Bake it for 25 minutes, take it out of the oven, let it cool in the tray. Cut it in square shapes. Eat the brownies cold.
