Inghetata Cu Vin Rosu, Piersici Si Sos De Cacao ( Red Wine Ice Cream With Peaches And Cacao Sauce)

Nu credeam ca asa ceva poate exista: inghetata de vin! Asta pana nu am mancat si m-am indragostit de ea. Prin urmare, am incercat sa recreez desertul mancat luna trecuta. Mmmmm a iesit tare buna. Si nici nu e greu de facut!
Ingrediente pentru 6 persoane:
- 500 ml frisca (sau smantana facuta frisca, neindulcita)
- 5 galbenusuri
- 200 ml lapte
- 250 g zahar tos
- 1 lingura esenta de vanilie naturala
- 200 ml vin rosu de buna calitate (eu am folosit Alira)
- 3 piersici
- pentru sosul de ciocolata: 3 linguri cacao + 200 ml apa + 1 lingura zahar pudra
Mod de preparare:
- Incalzeste intr-o craticioara,usor, laptele cu zaharul pana ce zaharul s-a topit.
- Intr-un castron bate putin galbenusurile ca sa se omogenizeze.
- Incet, in fir subtire, toarna laptele peste galbenusuri. Amesteca incontinuu. Ai grija ca laptele sa nu fie foarte fierbinte, ca sa nu coaca galbenusurile.
- Pune amestecul la loc in craticioara si amesteca-l pe foc mediu pana ce sosul se ingroasa. Ai mare grija sa nu dai focul prea tare, pentru ca sosul se poate branzi si nu-l mai poti folosi.
- Toarna sosul dupa ce s-a racit la temperatura degetului, printr-o strecuratoare in frisca. Amesteca bine.
- Adauga vanilia si vinul rosu. Omogenizeaza.
- Pune inghetata in cutii cu capac sau in diferite forme, in congelatorul dat la maxim. Se poate folosi si masina de inghetata, daca ai.
- Dupa 2 ore de stat in congelator amesteca inghetata cu lingura si pune-o la loc pana ce se ingheata bine.
- Inainte de a servi inghetata fa sosul de cacao: intr-o craticioara amesteca apa cu zaharul si cacaoa si lasa 2-3 minutela foc mic sa se ingroase sosul. Lasa la racit.
- Decojeste piersicile si taie-le felii subtiri.
- Serveste inghetata de vin rosu stropita din belsug cu sos amarui de cacao si cu cateva felii de piersica zemoasa.

- 5 egg yolks
- 200 ml milk
- 250 g granulated sugar
- 1 tablespoon natural vanilla
- 200 ml good quality red wine
- 3 peaches
- for chocolate sauce: 3 tablespoons cocoa + 200 ml water + 1 tablespoon powdered sugar
Preparation:
Warm the milk and sugar in a saucepan. In a separate mediumbowl, whisk together the egg yolk. Slowly pour the warm milk into the eggyolks, whisking constantly, then scrape the warmed egg yolks back into thesaucepan.
Stir the mixture constantly over the medium heat with a heatproofspatula, scraping the bottom as you stir, until the mixture thickens and coatsthe spatula. Leave the custard to cool at the body temperature. Pour it throughthe strainer and stir it into the heavy cream until smooth, then stir inthe vanilla and red wine.
Put ice cream in cans with lids or in various forms, in the freezer. You can also use ice cream machine, if you have.
After 2 hours in freezer mix it with a spoon and put it back until it freezes well.
Before serving the ice cream, make the sauce: warm the cacao, sugar and water in a saucepan for 2-3 minutes, until the sauce is thickened. Allow to cool.
Peel the peaches and cut them into thin slices.
Serve ice cream drizzled with the bitter cacao sauce and a few slices of juicy peach.
