Oh, dear November, be generous and share your bearable temperatures with the coming months because I so don’t want winter to come! This is just not my favorite season. I love hot sunny days and ice-cream and flowy dresses and none of this happens in winter season. Of course we can eat ice-cream in winter, but it’s just not the same. It’s like drinking water when you are not thirsty. A Christmas in T-shirt and sandals would not bother me at all.
Probably now you think I’m a horrible person. You must wonder: “How can you not like snow and warm, cozy sweaters and kids building snowmen and beautiful frost crystals on windows?” I do like all these things, it’s just that in winter, excepting the Christmas holiday period, people don’t look very happy or full of energy. Scientists say that this is due to the lake of the reduced exposure to sunlight. It is thought that light stimulates a part of the brain called the hypothalamus which controls mood, appetite and sleep. How can we treat this? With chocolate! Lots of chocolate! Chocolate is the most delicious treatment so let’s treat ourselves with chocolate.
Two days ago I made this very easy to make Chocolate Pear Cake. I was craving for a fudgy brownie cake, but I also had some delicious pears that I wanted to use and so I did. It was not intended to be a lava cake (if I would have, I’m sure it would have been a fail) but it was that kind of unexpected thing that happens in the kitchen (very rare indeed) that you do not regret at all. I was really happy that it happened like that because it was a delicious and decadent accident. I wish you all to have such (and only) delicious accidents in the kitchen.

Chocolate Pear Cake
6 oz dark chocolate
6 oz butter
4 eggs
1 ¼ cup brown sugar
1 tablespoon vanilla extract
1 teaspoon ground cardamom
1 ½ cup all purpose flour
½ teaspoon baking powder
3 medium pears
Melt the chocolate with the butter in a bowl over a pan of simmering water.
Whisk the eggs and sugar together in a bowl until the mixture is pale and creamy. Stir the melted chocolate into the egg mixture. Add the vanilla extract and the ground cardamom. Sieve in the flour and the baking powder and fold together.
Grease a 7 inch springform pan, pour the mixture in the pan and add in the middle the pears. Bake in the preheated oven, at 356ºF, for 30 minutes. Let the cake cool, then put it in the fridge for a few hours. I couldn’t resist it so my impatience was rewarded with a big delicious lava cake.
