Versiunea in limba romana: Muffins cu mere si dovleac … I bought this beautiful, huge pumpkin Now I’ve got “work” to do… I’ll make a pumpkin pie and I want to try some pumpkin blondies… I’ve made a wonderful pumpkin cream… Autumn roasted vegetables… Maybe I’ll try a pumpkin curry… I just need time, as ideas keep coming To start, apple and pumpkin muffins, with cinnamon, allspice and nutmeg. Great autumn flavours…
220 g pumpkin (no skin or seed, cut in small cubes)
1 green apple (peeled and deseeded, cut in small pieces)
3 cups flour
1 1/2 tbsp baking powder
2 tsp all spice
1 tsp grounded cinamon
1/4 tsp nutmeg
a little salt
2/3 cup sugar
200 ml milk
5 tbsp vegetable oil
2 eggs
Optional: 1 tablespoon of apricot jam disolved in 2 tablespoons hot water
Heat the oven at 190 degrees Celsius. Prepare the muffins tray. Mix the flour, baking powder, salt, allspice, nutmeg and cinnamon. In another bowl mix the eggs, milk and oil. Separately, mix pumpkin, apples and sugar. Add the flour mixture over the liquid one and mix carrefully, not in excess. Add the pumpkin and apple and mix carefuly. Fill the muffins tray (2/3). Bake for 20 -25 minutes in the hot oven.
Optional, you can dissolve 1 tablespoon of apricot jam in 2 tablespoons of water and glaze the hot muffins. We loved it. Delicious with a good, hot tea
